Quick Time-Saving Egg-ceptional Egg Recipes For All Meals

The egg is a super food that tastes pretty darn good on all different foods at all times of the day. Whether it’s breakfast, lunch or dinner there isn’t a meal that couldn’t benefit from nutritious eggs. In addition to being high in protein, they are often referred to as nature’s multivitamins and are full of antioxidants. What’s more, they are so easy to cook and can be consumed in almost any form, making them the perfect go-to choice for almost any meal. In honor of International Egg day, we’ve rounded up some of our favorite quick and time saving egg recipes.

Breakfast – Egg Muffins

We know what you’re thinking, muffins completely made of eggs… interesting. But don’t knock it until you try it. This is a light and healthy way to start every morning. Pressed for time, have to get the kids ready and take the dog out? No problem, these egg muffins are easy to make the night before so that it doesn’t hurt your morning routine. They’re full of vegetables, nutrients and most importantly, super simple to make! These can be made with any sort of vegetable or meat you love, these are the ingredients we love to use!

Ingredientsmuffin tin egg recipe

Diced up onion

Diced up red & green pepper

A handful of mushrooms

Baby spinach leaves

Splash of Milk

Cheese– of your choosing



Depending on how many egg muffins you’re making, you use 1 egg per muffin container.


  1. Finely chop the peppers, onion, mushrooms, spinach and garlic and set aside.
  2. Whisk eggs until beaten, add a splash of milk (this makes fluffier eggs), and sprinkle in some salt. Pour into a measuring cup and set aside.

Pro tip: Using a measuring cup makes it easier to be poured into a muffin tray.

  1. Heat a non-stick pan over a medium flame and once it is hot enough, drizzle some olive oil into the pan. Sauté the peppers and onion till they are soft before adding spinach and mushrooms. Allow it to cook for 2 minutes before adding garlic, and let the vegetables cook for another 30 seconds.
  2. Preheat the oven to 350F. Make sure to grease the muffin tray so that they’ll pop right out of the tray when you take them out of the oven.
  3. Drop the vegetables and cheese into the muffin tray. It’s easiest when you drop in the veggies and then sprinkle the cheese on top. Pour the eggs on top of ingredients.

Pro tip: When filling the tin with the eggs make sure to leave about a centimeter or two from the top, because the eggs tends to rise.

  1. Place them in the oven and they should be ready in around 15 minutes. This differs per oven, for instance, mine tends to cook quicker. Make sure to watch the eggs cook and when they’re done they should rise like muffins would and will look a little golden brown.

Enjoy: Pair these eggs with a few pieces of toast, some bacon, a glass of juice or a cup of coffee and you’ll be sure to kick start your morning! What’s great about these is that you can prepare them for the entire week and heat them up for breakfast every morning. No more breakfast hassle or even skipping breakfast.

Lunch– Chicken, Avocado & Egg Pretzel Bun Sandwich

This recipe takes you no more than 10 minutes and is one you won’t be able to stop making. It’s quick, simple, and extremely delicious.


½ avocadopretzel bun egg sandwich

1 egg

1 chicken breast– or any meat of your choosing (also tastes great without meat for those vegetarians 🙂 )

Handful of spinach leaves

1 slice of mozzarella cheese– or any cheese of your choosing

All of your favorite sandwich toppings



  1. Pre-cook the chicken in the oven before making sandwich. We love to prep a lightly salted and garlic chicken breast.
  2. Prepare the egg for the sandwich however you prefer. For this recipe, we like to cook the egg sunny side up, which is pretty simple. Crack the egg in a frying pan and watch it cook. The egg white will begin to harden and once it does, it’ll be ready to be put on the sandwich.
  3. Thinly slice the avocado so it’ll span the entire sandwich.
  4. Chop up your spinach so that it’s in smaller leaves.
  5. Cut your pretzel bun to the perfect size and you’re ready to put your sandwich together
  6. Place all of the ingredients on your sandwich and lastly, top it with the sunny side up egg.

Dinner – Potato Frittata with Goat Cheese

This recipe is easy to make and is bound to impress even the pickiest of your lunch guests!Potatoe fritata with goat cheese


4 medium potatoes

1 clove of garlic

8 large eggs

100 grams of goat’s cheese

3 tablespoons of pesto


  1. Gather all ingredients and preheat oven to around 425 degrees Fahrenheit. Thinly slice your potatoes.
  2. Add some salt to water and bring it to a boil over a high flame. Once the water is boiling, add potatoes to them and cook for about 5 minutes or until the potatoes are tender.
  3. Mince the clove of garlic and toss it into the bowl of eggs. Whip and add any additional seasoning you enjoy.
  4. Once the potatoes are done, add them to the eggs and whisk well.
  5. In an ovenproof pan, heat a splash of oil and cook the egg-potato mixture on a low heat.
  6. Cook only for a short period of time. You’ll notice the eggs begin to set, but when it is about 3/5 of the way set remove it from the stove.
  7. Take it off the stove and cook it in the oven for roughly 10 – 15 minutes, or until it is cooked completely.
  8. Before serving, add the goat cheese and pesto. If you’re like us we love a lot of the toppings. Make sure to lather evenly so each piece is just as delicious.

Enjoy: This dish pairs really well with a glass of wine, so the next time you have the girls over, you don’t have to fret over what to cook for them.
